But, do you have a copy of Artisan Vegan Cheese? You can make your own. Miyoko Shinner also has recipes on her blog. Remember, I haven't had dairy c...Good question. Remember, I haven't had dairy cheese since 1981, so I'll do my best to answer. It's amazing how some tastes and textures come flooding back no matter how long it's been since you've tasted them, and I think cheese is one of those items. Yes, I think they taste like cheese. Fauxmage is not a hard cheese, like cheddar, for example. It is spreadable, though not soft like hummus. It has a firm, spreadable consistency. It has the tang of cheese. They are real cheeses made from cashew cream rather than dairy cream, and cultured like dairy cheese. Miyoko's Kitchen (made in San Francisco) makes both soft and hard cheese. I prefer the soft, but my husband loves the Rustic Alpine flavor, which has a smoky, tangy flavor. Both Fauxmage and Miyoko's Kitchen are free of the many 'extra' ingredients often found in vegan cheeses, and I prefer that.
