Love that posole — again and again and again
This isn't a book review, it's just love note about Terry Hope Romero's cookbooks. If you don't already own Vegan Eats World or Viva Vegan, you should seriously consider adding one or both to your collection. Everything we make from them is delicious. Take the Korean veggie bulgogi (from Vegan Eats World) pictured above. My husband made a simplified version of it, and said it was very easy. He used only tofu and mushrooms, and he added kale and kimchi for a fabulous meal. It was so good I couldn't believe he'd made it himself.
We've cooked lots of meals from Viva Vegan, but the dish we keep coming back to again and again is quick red posole with beans. At first we made it with canned hominy, but then decided we don't really like hominy as much as we like regular corn, so now we make it with fresh or frozen yellow corn. I suppose it's not really posole any more, but it's still amazing.
It's so easy it practically makes itself, and so rich and flavorful that we've served it to guests on more than one occasion.
We've added different vegetables, and topped it with everything from traditional shredded cabbage, avocado, thinly sliced radishes, and tortilla chips ...
to crazy things like brussels sprouts and pumpkin seeds. It's one of our favorite go-to fast dinners. We almost always have the ingredients on hand, and the best part is we never get tired of it!

Ask your doctor about meat
Here is PETA's version of all the "ask your doctor about (various drugs)" ads we are bombarded with on TV. PETA isn't always known for constraint or good taste, but what do you think of this one? I think it's about two years old, but is making the rounds again.

I wish I have both of these cookbooks in my collection - and yes, I would totally dig the Korean veggie bulgogi! I love posole with hominy - I had it in Mexico City - it was pretty brothy but delicious. I love the way you add different kinds of vegetables as toppings.
ReplyDeleteI found my copy of Vegan Eats World during VVC in Portland at Powell's Books for a really great price, and I couldn't resist buying it. It's a great cookbook.
DeleteI love Terry's cookbooks (Viva Vegan! is one of my all-time favorites)! I purchased Vegan Eats World this summer and fell in love with it, too. Her recipes are one of the few that I'd feel safe trying for the first time on guests. I haven't tried either of the above-recipes yet, but they sound wonderful. Thanks for the inspiration for next week's menu. :)

DeleteI love her posole recipe. What a great idea to use fresh corn! It's kind of the perfect time of the year to do it, too! It never occurred to me to add different veggies...I don't think outside the box very much! But I am definitely going to try it. I bet Brussels are really tasty in posole!
ReplyDeleteFresh corn isn't traditional, but it's sure good — even frozen corn tastes great. We add whatever veggies we happen to have, and so far they have all worked. My favorite, though, is raw shredded cabbage and avocado.
DeleteI have yet to own any of Terry's cookbooks aside from those she co-authored with Isa...I think. She is amazing though, so I should totes get one. The food looks delicious and I'm loving the posole.
ReplyDeleteTerry's recipes are really great — they taste much more complicated than they are. Even my husband can made delicious food from her books.

ReplyDeleteThat PETA ad was pretty good actually! No naked ladies or horrifying pictures of factory farms (I know there are people need to see horrifying pictures of factory farms, but I just cannot look at that stuff.) The fact that his little boat was called "Titanic" was a very clever touch.
I agree about the PETA add — pretty clever and not obscene. I really liked the part where he dangled his fingers through the water.

ReplyDeleteI've just purchased my first can of hominy; this sounds like a good place to start.
Terry is really good with directions, and her ingredients are spot on. Not everyone is as skilled a cookbook author as she. You should definitely turn the can of hominy into posole. And top it with finely shredded raw cabbage, sliced radishes and avocado.
DeleteTerry's cookbooks are the best! I have both but haven't tried any of the recipes that you've made. Seeing how yummy and easy they are, I'll have to give them a try for sure. :-)

It's really supposed to have hominy, but we're not big fans. You should give it a try, though, you might like it.

DeleteI don't have either of those cookbooks. And now I really want them, lol! The only books I have from Terry are the ones she has co-written with Isa. I have a slight cook book addiction and certainly don't need anymore, but I have a feeling I will be asking for both of these for upcoming holidays...

We should be in a support group for cookbook addiction, though we'd probably enable one another. I also have a tendency to collect kitchen equipment.
DeleteI don't have Vegan Eats World yet but I really want it! Terry is a queen of vegan food! Cooking through Viva Vegan was a really enjoyable experience... The hominy was a little weird at first, but I do think I liked it.
ReplyDeleteYou should get it, or borrow it from the library. I have mixed feelings about the hominy. At first I liked it, then I didn't. And, anyway, what the hell is it?
DeleteFirst off that video is so well done. I like it as much as I do hominy. I love posole and prepare it with hominy, maybe now I will prepare it with a video.I serve mine with avocado vegan creme and cracked tostadas.

Avocado cream and cracked tostadas will taste much better than a video. I guarantee it. I like to pile chips in my posole but I didn't want to admit that.

ReplyDeleteThe posole recipe always makes me so happy — it tastes great and looks beautiful. I never get tired of it. If it makes you feel any better, the vegetables I grew up with were frozen string beans and canned peas. And iceberg lettuce.

DeleteI have both of Terry's books and I STILL have not made anything from Vegan Eats World. Those dishes sound great, I really need to do nothing but cookbook cooking once mofo is over.
ReplyDeleteI'm never going to admit how many cookbooks I have that I've never made anything from. I could do an entire mofo on that subject. :) But I encourage you to cook something from Vegan Eats World!
