Dips for dads — and don't forget the cake

We celebrated Father's Day at our son and daughter-in-law's house where we had a delicious brunch. We had tofu scramble from Isa Does It (reviewed herealong with roasted potatoes and sweet potato fries. And a giant container of Washington State cherries.

I brought two contributions to the meal, both made before 10 a.m. Sunday morning. If I was able to get the two dishes made by 10, you know they were easy to do — early morning isn't my favorite time to cook. I had just seen the Life Affirming Nacho Dip from The Oh She Glows Cookbook (reviewed here) over on Vegan Eats & Treatsand I knew I had to make it. It's rich and creamy, highly satisfying, really easy, really delicious, pretty, contains no added oil, and I recommend it. I liked it so much, I did a search and found a link to the recipe so you can make it, too. Or you could buy the book. In fact, these two cookbooks are currently the most used at our house. You can find the recipe by clicking here.

In addition to the dip, I also made the blueberry-strawberry-lemon quick bread that I wrote about in my last post, and once again it came out perfectly. That's three good results in a row — definitely a keeper. (recipe here)

My strawberry patch

I have a small strawberry patch — really small as you can see by the harvest so far. But, I'm not daunted by the meager return. Maybe some day the little patch will surprise me. In fact, I should go outside right now and see if there are any berries!

  1. Such cute little berries! How did they taste?? I also have been eating lots of cherries too, but I bet local ones are even better.
The nacho dip looks incredible. I would love to eat that....

    1. The berries were the best, and I'm not just saying that because I grew them! There was actually a third berry a few days before these two, so don't feel sorry for me. Hahaha. The nacho dip was excellent — I recommend the full amount of cayenne for a nice spicy dip.

  2. Thanks for the reminder on the nacho dip! It was a recipe that caught my eye right away when I first leafed through the OSG cookbook. However, with just two people in our household, I needed to wait until there were more people to enjoy it. Now that we're having more summer gatherings, this is the time!

    1. We shared the dip among six, but it's so tasty I'm afraid the two of us would eat it all if we had the chance. I wonder if it freezes well. If you give it a try, I think you'll like it as much as we did — make it spicy!

  3. I'm all over that nacho dip. It sounds fantastic! Just pinned it so I'll remember to print it out.

I would be excited about a few strawberries. :) I had a rather large patch of them in a previous house & loved it.

    1. I'm pretty excited about the strawberries. A large patch would be nice, but when there are just a few, each one is really special.

  4. I really like the look of that dip - I had a quick look at the recipe and it looks distinctly doable and I'd be hard pressed not to eat it with a giant spoon all to myself!

    1. It was really doable, and you should do it! I can see spooning it up, but chips or veggies would make it even better!

  5. Great looking dishes! I just got the cookbook, I haven't made the nacho dip yet but it's definitely bookmarked. These are the cutest berries, beyond the fact that you grew them yourself. :-)

    1. The dip is well worth making — I'll be looking for it on your blog! As for the berries, I almost didn't want to eat them, but there's really no point in saving berries. I've had two more since then. I wonder if there will ever be enough at one time to make a berry dessert. Maybe not.

  6. Sounds like a wonderful brunch! I have a go-to queso recipe, but that nacho dip has been making the rounds, and it looks amazing. So intrigued!

    1. Everyone liked the dip a lot, and I recommend trying it at least once. Who knows, it could become your new go-to recipe. :)

  7. Sounds like a wonderful brunch! I tried Angela’s Life Affirming Nacho Dip, but mostly liked her nacho cheese sauce, we didn’t like the ‘marinara’ ingredient mostly and would put fresh tomatoes instead. What cute strawberries you found - I would love to eat a bunch of them!

    1. Fresh tomatoes would be a good choice though the marinara worked for us. I wish the strawberry patch would produce a bunch!
