Gather the limes.
Zest and juice the limes.
Bake a flaky crust and pile in the creamy lime filling. Refrigerate.
Enjoy. The gluten-free and vegan recipe for amazing, creamy lime pie is a tester recipe for Laurie Sadowski's upcoming pie book. Laurie is the author of The Allergy-Free Cook Bakes Bread which I reviewed here and here.
wow this looks so good! i love lime pie!
ReplyDeleteThe pie was great!
DeleteBeautiful colour! And I will have to check out her cookbooks :)
ReplyDeleteHer first book on bread is available, the second book on cakes and cookies is coming out soon and the third book will be on pies and other desserts.
DeleteOh pooh, I was hoping for the recipe. Did I tell you my hubby is vegan now. That has been a few months now. He has settled in to it well.
ReplyDeleteI noticed there was a vegan in your dining group that I figured out was your husband. Now you will have to do more vegan cooking! I wish I could share the recipe but I'm not allowed to. It's really good.
DeleteYou temptress! I think I could steal a slice from you and it would be perfectly camouflaged my Frankenstein makeup! :D
ReplyDeleteI am sworn to secrecy. Not even Frankenstein can pry the recipe from my lime-soaked hands.
DeleteOh, so pretty! I'd love a bite of that!
ReplyDeleteI'm sure you would like it — very yummy.
DeleteOh man, another pie book? I'm really feeling the pressure now... There's gonna be at least three coming out around the same time, my own included! I'm so uncompetitive, it has me really nervous.
ReplyDeleteThis one is specifically gluten-free if that takes any of the pressure off. Are pies the new cupcakes? :)
DeleteHey everybody I know the recipe I know the recipe. I made it up in my head. I don't want to get Andrea in more trouble than she already is ;)
ReplyDeleteI love limes!
ha ha - you goof ball GiGi. This pie looks great Andrea. I love lime pies so much. In general, I really love limes. I get why lemons are popular, but limes have my heart.
DeleteYeah, limes have a special tang that trumps lemons, though I do love lemons, too.
DeleteGiGi, to what trouble are you referring? And when does your cookbook come out? You could call it, "Psychic Recipes."
DeleteWow, that looks almost too beautiful to eat! Almost - I think I'd be able to get over it's beauty after the second or third slice!
ReplyDeleteHa! Yes, I think you would.
